South Slope is the easiest place to work through Asheville's craft beer scene alone, with relaxed taprooms and plenty to eat. It empties out quickly late at night, so arrange your ride home in advance.
South Slope is Asheville's brewery district, a short walk south of downtown. A dozen or so breweries, a cidery, a distillery and a number of restaurants are clustered around Buxton Avenue and Coxe Avenue. It's busiest from late afternoon into the evening, when taprooms fill with locals and visitors. Many places have patios and food trucks, and sitting at the bar alone is the norm. The area is mostly commercial and industrial, so it empties out fast once the taprooms close, and some blocks are quiet and nearly deserted late at night. Go with the crowd, sort out your ride home before you start drinking, and don't walk alone through the quieter blocks near the edges of the district.

Downtown is the easiest base for a first visit, with the widest choice of food, music and bars within walking distance. Some street activity at the edges of the core is normal, and the usual city precautions apply at night.
West Asheville is a laid-back, local alternative to downtown with good breakfast spots and casual evening options. It's low-key and comfortable, but you'll need a ride to get downtown at night.
The River Arts District is worth a daytime visit for the studios and murals. Go by car or rideshare, and be more careful on the dark, quiet stretches after sunset.
