The Pearl is the most polished evening area in San Antonio, with good food, strong lighting and easy solo seating. It costs more than other areas and isn't where locals go for nightlife, but it works well as a base.
The Pearl is a former brewery that is now a food and shopping district just north of downtown, with restaurants, a culinary school, a hotel and a farmers market. The grounds are private property with their own security and good lighting, and the crowd is mostly families and couples, so it is one of the easier places in the city to eat or drink alone. Sitting at the bar is common, and several restaurants have counter seating. The weekend market gets crowded, and car break-ins happen on nearby street parking, so use paid lots or a rideshare. The riverside path back to downtown is fine by day but empty at night, so take a ride after dark.
